OATY CHOC MOOKIES (muesli cookies)

In a bowl, mash 2 ripe bananas & 1 egg / add 2 cups of oats (I use ‘quick oats’ for texture but you can use any preferred), 3/4c desiccated coconut, 1/2c raw buckwheat, 1tbsp maple syrup, 3tbsp preferred nut butter (I use Fix & Fogg crunchy peanut butter) & 1/2c dark chocolate chips. Roll into balls (recipe will make about 15-20 mookies), placing on a parchment lined oven tray. Bake at 200 degrees fan bake for 15-20 minutes. After 10 minutes, flatten mookies slightly with a fork.

These mookies (muesli cookies) are not your traditional sugar-ladened, shop-bought biscuit. The texture is wetter to work with & they won’t be quite so sweet - however - they’re full of nutritious ingredients that make a fab mid-morning coffee snack or afternoon tea the kids will love - without the refined sugar. Consuming less refined sugar makes us feel better; period. If your mookies need further sweetening to please smaller mouths, try adding a little more maple syrup or honey.
