Sweet potato shepherd’s pie
Hearty, wholesome goodness for the whole family.
INGREDIENTS:
1 tbsp olive oil
2-3x sweet potatoes
1x brown onion
2-3x cloves garlic
3x diced carrots
2x diced or grated zucchini
1x diced red capsicum
1x diced leek
750g minced beef
1tbsp worcester sauce
1 tbsp tomato paste
1 tbsp fruit chutney
knob of butter
1c grated cheese
A splash of milk (for mashing)
Salt and pepper
Peas to serve
METHOD:
Peel & roughly chop sweet potato, boil until soft. Drain, adding a generous knob of butter, a dash (or two) of milk & half the grated cheese. Mash to desired consistency.
Heat oil in a pan, add minced beef & brown. Once browned, add onion, garlic, all vegetables & seasoning. As veg starts to soften, add worcester sauce, tomato paste & chutney. Let mince mixture cook until desired (the longer often the better), then transfer to an oven dish.
Evenly spread sweet potato mash on top of mince, creating a pie topping. Sprinkle remainder of cheese & bake at 200 degrees for 45 minutes (oven dependent).
Serve with peas for hearty, moreish winter staple.
