OATY CHOC MOOKIES (muesli cookies)
These mookies (muesli cookies) are not your traditional sugar-ladened, shop-bought biscuit. The texture is wetter to work with & they won’t be quite so sweet - however - they’re full of nutritious ingredients that make a fab mid-morning coffee snack or afternoon tea the kids will love - without the refined sugar.
Consuming less refined sugar makes us feel better; period. If your mookies need further sweetening to please smaller mouths, try adding a little more maple syrup or honey.
In a bowl, combine the following ingredients:
mash 2 ripe bananas, mashed
1 egg
2 cups of oats (I use ‘quick oats’ for texture but you can use any preferred)
3/4c desiccated coconut
1/2c raw buckwheat
1tbsp maple syrup
3tbsp preferred nut butter (I use Fix & Fogg crunchy peanut butter)
1/2c dark chocolate chips.
Roll into balls n a bowl, (recipe will make about 15-20 mookies), placing on a parchment lined oven tray. Bake at 200 degrees fan bake for 15-20 minutes. After 10 minutes, flatten mookies slightly with a fork.
