banana loaf recipe

INGREDIENTS:
3 very ripe bananas
2/3 cup of boiled, mashed pumpkin (in the form of puree)
1 tsp of nutmeg
1 tsp of cinnamon
1 tsp of vanilla extract
1/2 cup of crushed walnuts or pecans
1 egg
1 & 1/2 cups of almond flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp of apple cider vinegar
A pinch of salt
An optional 1 tbsp of maple syrup
METHOD: Preheat your oven to 180°C. Mash your bananas in one bowl until they’re free of lumps. Boil pumpkin and mash to a smooth consistency, measuring out two thirds of a cup. Add mashed pumpkin and eggs to bananas mixing well. In a separate bowl, combine all dry ingredients. Pour the banana mash into the dry mix, and don’t be afraid if the concoction doesn’t look like a typical batter. Mix. Finally, spray a lined baking dish with olive oil (or butter, coconut oil, etc.), pour the mix into the pan, and pop into the oven. Bake for 35 minutes.
